We serve local cheese on The Chef's Selection Cheese plate to include: Monocacy Chipotle: a local farmstead cheese from Cherry Glenn Goat Farms in Maryland, is a soft ripened cheese made with the addition of chipotle pepper and comes on smoky and then follows thru with a wonderful spicy finish. Bay Blue: Chapel’s Country Creamery in Maryland provides a buttery stilton type blue with a smooth clean finish and slight mushroom undertones. From Maryland’s Eastern shore, Bay Blue is made from the milk of Holstein and Jersey Cows. Cowtipper: A farmstead cheese from Calkins Creamery in Pennsylvania uses the freshest milk from their Holstein Cattle, free of antibiotics and hormones, this Gouda is soaked and washed with Yuengling Porter. It is soft and creamy with a malty finish.
